This is so EASY to do. We put it under a chicken curry dish last night. It was delicious. Take one head of cauliflower and break it or cut it apart and wash it really good. Put the florets in a food processor (I use a hand processor) and turn or pulse it to a rice like consistency. (only a minute to do this). Then put it in a steamer basket in a stock pot a steam for just a few minutes. (maybe 5 ) DONE!!!!! Caulirice!!!!!
